Farfalle Pasta with Shrimp

Quick and delicious meal... the whole family will love it!

Farfalle Pasta with Shrimp

1 lb. farfalle pasta (bow-tie)
1 tbs. olive oil
2 diced garlic cloves
2 diced tomatoes, peeled and seedless
1 lb. shrimp
1 cup cherry tomatoes, halved
1 tbs. butter
salt and pepper to taste
chopped parsley and/or green onions (to taste)
shaved parmesan cheese to garnish

1 – Cook the pasta according to the package instructions. Meanwhile, prepare the sauce.
2 – In a large saucepan, heat the olive oil and put the garlic.
3 – Add the peeled tomatoes, a pinch of salt and mix well. Cook until tomatoes are almost melted.
4 – Add the shrimp, stir, and cook for about 4-5 minutes (depending on shrimp size).
5 – Add the cooked pasta, mix well, and adjust the seasoning (salt and pepper). Add 1 tablespoon of butter and cook for 2 minutes.
6 – Turn off the heat and put the cherry tomatoes and parsley/green onions.
7 – Garnish with parmesan cheese and serve.

Tips and Options

  • For a creamier sauce, add 1 or 2 tablespoons of cream cheese or heavy cream.
  • Add mushrooms or canned heart of palms to the recipe.
