Farfalle Pasta with Shrimp

Quick and delicious meal... the whole family will love it!




Farfalle Pasta with Shrimp

Ingredients
1 lb. farfalle pasta (bow-tie)
1 tbs. olive oil
2 diced garlic cloves
2 diced tomatoes, peeled and seedless
1 lb. shrimp
1 cup cherry tomatoes, halved
1 tbs. butter
salt and pepper to taste
chopped parsley and/or green onions (to taste)
shaved parmesan cheese to garnish

Directions
1 – Cook the pasta according to the package instructions. Meanwhile, prepare the sauce.
2 – In a large saucepan, heat the olive oil and put the garlic.
3 – Add the peeled tomatoes, a pinch of salt and mix well. Cook until tomatoes are almost melted.
4 – Add the shrimp, stir, and cook for about 4-5 minutes (depending on shrimp size).
5 – Add the cooked pasta, mix well, and adjust the seasoning (salt and pepper). Add 1 tablespoon of butter and cook for 2 minutes.
6 – Turn off the heat and put the cherry tomatoes and parsley/green onions.
7 – Garnish with parmesan cheese and serve.

Tips and Options

  • For a creamier sauce, add 1 or 2 tablespoons of cream cheese or heavy cream.
  • Add mushrooms or canned heart of palms to the recipe.

Upside Down Banana Cake

Simple and tasty recipe, this cake tastes like afternoon at grandma's house!

UPSIDE DOWN BANANA CAKE
(servings: 20 / time: 50 minutes)
 
Ingredients
Caramel sauce:
1 cup sugar
½ cup of hot water
3 bananas, sliced

Batter:
1 can of condensed milk
1 can measure of milk
1 tsp cinnamon
½ cup vegetable oil
3 eggs
2 cups all-purpose flour
1 tbs baking powder

Directions
Caramel sauce:
1 – Place the sugar in a saucepan and cook on low heat.
2 – When starting to brown, place the hot water and stir gently to dissolve all the sugar.
3 – Pour the liquid into the baking pan, spreading evenly.
4 – Add the banana slices, close to each other.

Cake Batter:
1 – Beat eggs in a blender for 1 minute.
2 – Add condensed milk, milk, oil and cinnamon and beat for 3 minutes.
3 – Put the mixture in a large bowl add the flour and baking powder (sifted) and stir until smooth.
4 – Pour the batter over bananas and bake, in a preheated oven (350°F), for about 35 to 40 minutes.
5 – Let it cool slightly, unmold the cake and serve.

Tips and Options
  • Add to the batter: 1 mashed banana and chopped almonds.
  • Instead of bananas, put pineapple, apples or peaches.

Brazilian Cattleman's Beans

A typical dish from the countryside of Minas Gerais, a state well known for its amazing culinary, and historical sights.


BRAZILIAN CATTLEMAN'S BEANS
(servings: 10 / time: 1h 30min)
 
Ingredients
1 lb pinto beans, cooked and drained
2 tbs vegetable oil
8 to 10 oz chopped bacon
1 lb sliced smoked sausage
2 chopped onions
6 diced garlic cloves
2 bay leaves
10 to 14 oz cassava (manioc) flour
salt an Tabasco pepper to taste
1 cup chopped parsley and chives
6 hard boiled eggs, sliced

Directions
1 – Cook the beans al dente, drain and set aside.
2 – In a large saucepan, heat oil and place the bacon and sausage to fry until well browned.
3 – Add the onions and mix well. Cook for about 4 minutes, stirring constantly.
4 – Place the garlic and bay leaves and fry for about 2 minutes, mixing.
5 – Add the manioc flour and, stirring frequently, let cook for about 5 minutes.
6 – Put the beans and cook for 5 minutes, in medium heat, stirring constantly.
7 – Taste. Add salt and pepper to taste.
8 – Turn off the heat, add parsley, chives and sliced eggs. Remove the bay leaves, mix well and serve.

Tips and Options

  • Pork, white rice, collard greens salad and fried pork rinds go well with this dish.

Fettuccine with Garlic and Bacon

With very few ingredients, you prepare this beautiful and tasty noodles recipe!


FETTUCCINE WITH GARLIC AND BACON
(servings: 5 / time: 25 minutes)
 
Ingredients
1 lb fettuccine noodles
8 oz chopped bacon
1 tbs butter
4 garlic cloves, finely diced
salt and olive oil to taste
½ cup chopped fresh parsley
grated Parmesan cheese (optional)

Directions

1 – Cook the pasta according to the package instructions.
2 – In a saucepan or high skillet, place butter and bacon and fry until the bacon is crispy.
3 – Add the garlic and mix for a few second.
4 – Place the fettuccine, already cooked, and stir well.
5 – Add salt and olive oil to taste.
6 – Turn off the heat and sprinkle parsley.

Tips and Options

  • Spice up the dish, adding hearts of palm, mushrooms or broccoli.
  • It can be served as one-dish meal or with grilled chicken breast and green salad.

Fake Tuna and Arugula Pizza

Quick, healthy and tasty option for dinner!

 


FAKE TUNA AND ARUGULA PIZZA
(servings: 2 / time: 15 minutes)

Ingredients
1 pita bread
4 tbs tomato sauce
1 can tuna
1 tbs cream cheese (optional)
2 tomatoes, diced
½ cup diced onion
1 bunch of arugula, seasoned with salt, lemon juice and olive oil

Directions
1 – Open the pita bread in half to prepare two mini-pizzas.
2 – Spread the tomato sauce over the bread.
3 – In a small bowl, mix tuna, tomato and cheese, and put a little bit of salt and olive oil. 4 – Pour the mixture over the bread and bake (350 °F) for 10 minutes.
5 – After baking, add the arugula and serve.

Tips and Options

  • Add shaved Parmesan cheese.
  • Instead of tuna, use shredded chicken and corn.
  • Spinach is also a good option.

Beef Strips with Onion

Great appetizer or quick dinner to pare with a cold beer!


BEEF STRIPS WITH ONION
(servings: 4 / time: 30 minutes)

Ingredients
1 lb thin cut beef sandwich
1 tbs olive oil
salt and pepper to taste
3 mashed garlic cloves
1 tsp vinegar
1 large onion, sliced thinly
1 tbs soy sauce (optional)

Directions
1 – Cut the meat into strips and, in a bowl, season well with olive oil, salt, pepper, garlic and vinegar.
2 – In a large pan (or skillet), heat 1 tbs vegetable oil and add the meat to fry.
3 – Leave for 2 minutes without stirring. Then stir and fry for 2 more minutes.
4 – Add the onion and sauté, stirring, until golden.
5 – Optional: to finish, pour the soy sauce, mix for less than 1 minute, and turn it off the heat.

Tips and Options

  • Serve with sliced French bread and lettuce salad.
  • You can also use chicken breast instead of beef.
  • Spice up the dish with slices of red peppers or mushrooms.
  • Freeze the leftovers! When you have one of those lazy days, warm up the meat with tomato sauce and make a delicious pasta.

Cream of Broccoli Soup

Creamy, tasty and easy-to-follow recipe!


servings: 4
time: 40 minutes


Ingredients
3 cups chopped broccoli
1 tbs olive oil
½ chopped onion
2 garlic cloves, chopped
4 cups vegetable broth
3 potatoes, cut into cubes
2/3 cup heavy cream
1 tbs grated parmesan
salt and pepper to taste



Directions
1 – In a saucepan, heat the olive oil and add onion and garlic. Cook for 2 minutes.
2 – Place the broccoli and the broth. Stir well.
3 – Cook until the broccoli is tender. If you want, set a few pieces aside.
4 – Mix all in a blender until smooth and creamy and return to the pan.
5 – Add potatoes and cook over medium heat for 8-10 minutes, stirring occasionally.
6 – Pour the cream, add salt and pepper and grated cheese. Mix well. Leave on low heat for about 5-10 minutes.

Tips and Options

  • Add fried bacon pieces after the cream is done.
  • Sprinkle with parsley and/or green onions before serving.

Chicken Breast with Wine


Fresh herbs and a touch of white wine make all the difference in this dish.

servings: 4
time: 1 hour


Ingredients
4 chicken breast fillets
salt and pepper to taste
3 garlic cloves, minced
1 tbsp olive oil
1 tbsp fresh thyme
lemon zest
juice of 1 lemon
1 tbsp mustard
1 ½ cups dry white wine
1 cup sliced mushrooms
½ cup diced shallot or red onion
1 tbsp room temperature butter mixed with 1 tbsp flour

Directions

1 – In a large bowl, season the chicken breast with salt, pepper, garlic, olive oil, thyme, lemon juice, lemon zest and mustard.
2 – Add ½ cup of wine and let it rest, while you prepare the remaining ingredients.
3 – Heat a pan or large skillet and place a little bit of oil.
4 – At high temperature, put the chicken fillets and let it brown for 3 minutes, on each side.
5 – Remove from pan and place on a baking sheet. Bake (at 350°F) for 20 minutes.
6 – Return skillet to heat, add some olive oil to fry the onion.
7 – Add the mushrooms and cook until tender.
8 – Place 1 cup of white wine and, stirring constantly, allow evaporating almost completely.
9 – Add the butter and flour mixture and stir until it gets thick.
10 – Prove and adjust the salt and serve over the chicken fillets.
Tips and Options
  • After roasting the chicken, cover lightly with foil paper and let rest for 8-10 minutes before serving. That will make the meat more tender and juicy.
  • The chicken can be seasoned with hours in advance or even the day before, keeping in the refrigerator.

Low Fat Hamburger

With just a few ingredients you can fix dinner for the whole week.


servings: 12

Ingredients
2 lb ground beef (I used ground sirloin, 4% fat)
2 eggs
½ diced onion
4 garlic cloves, minced
½ cup bread crumbs, plain
salt and pepper to taste
½ cup chopped fresh parsley


Directions
1 – Place all ingredients in a large mixing bowl and mix well.
2 – With a measuring tool (the ice cream scoop or a 1/3 cup), measure 12 meatballs.
3 – Shape into burgers, putting on a board or a baking sheet lined with foil paper.
4 – Bake for 25 minutes (350°F).
5 – Let it rest 10 minutes before serving.
 
Tips and Options
  • You can use any type of ground meat (chicken, beef or turkey). The leaner, the better.
  • Serve with green salad and rice or mashed potatoes.
  • Freeze the burgers still raw. Wrap each one in plastic wrap and then use a ziploc bag.
  • This is a great dinner option for those wanting to stay in shape. Just bake one burger and eat with a big green salad.

Moist Coconut Cake

This wrapped cake is practical for yard parties or to take on picnics.


servings: 20
time: 20 minutes


Ingredients
4 eggs, separate yolks and whites
1 ½ cup sugar
2 cups all purpose flour
1 cup milk
1 tbs. baking powder

Syrup:
2 cups water
8 tbs sugar
½ can condensed milk
1 can (13 fl. oz.) coconut milk
8 oz grated coconut


Directions
1 – In the mixer, place egg yolks and sugar and beat until it forms a very light yellow cream.
2 – Add flour and milk, gradually.
3 – Turn off the mixer and add baking powder and snow whites, stirring with a spoon.
4 – In greased and floured baking sheet, bake (at 350° F) for about 35 minutes. Until the cake is golden on top and completely baked.
5 – Let the cake cooling, while you make the syrup.
6 – For the syrup, place all ingredients in a pot (expect the grated coconut) and let thicken, stirring often, for about 10 minutes.
7 – Cut the cake into squares, dip the pieces in the syrup and then pass through the grated coconut.
8 – Wrap in foil paper and place in the refrigerator. Serve chilled.

Tips and Options

  • Add vanilla drops or lemon zest in the dough before baking. Finely chopped walnuts or almonds will also be a delight.

Fillet Mignon with Wine and Portobello Mushroom

Juicy and tasty!



servings: 4
time: 30 minutes


Ingredients
4 fillet mignon steaks
salt and pepper to taste
2 garlic cloves, mashed
1 tbs olive oil
½ onion, finely diced
1 cup Portobello mushrooms, diced
1 cup dry red wine
1 tbs. butter

Directions
1 – Season the steaks with salt, pepper and garlic, spreading the seasoning on both sides. Set aside.
2 – In a large skillet, heat oil and add the fillets (cook about 3 minutes each side).
3 – Remove from the pan and out into the oven (350°F ) for 12 to 15 minutes.
4 – Meanwhile, return the skillet to the heat, put a drizzle of olive oil and add the onions. Sauté until onions are almost translucent.
5 – Add the mushrooms with a pinch of salt and pepper. Mix well.
6 – When mushrooms are beginning to soften, add the wine, lower the heat to medium and cook until the drink evaporates almost completely.
7 – Add the butter, remove from heat and pour over the steaks.


Tips and Options
  • After baking the meat, remove from oven and cover lightly with foil, letting the meat rest for 10 minutes before serving. This will not only allows the meat to finish cooking, but will also retain all its juice, getting much more tender and flavorful.
  • As a side dish, mashed potatoes, green salad and/or some very tasty vegetable, such as this Sauteed Garlic Asparagus on the photo.
  • Instead of Portobello, use shiitake, white or cremini mushrooms.

Strawberry and Chocolate Candy

A delicious treat that makes a great Easter gift!

servings: 16 candies
time: 40 minutes


Ingredients
12 oz. chocolate chips (milk, semi-sweet or dark)
1 small box of strawberries, cut into small pieces

*chocolate candy molds

Directions
1 – Put half of the chocolate to melt in a water bath.
2 – Once melted, place the bowl in a tray with ice and stir well to cool off a little bit.
3 – Pour the chocolate into the mold. Turn the mold slightly so that the chocolate gets to the edges too.
4 – Turn the mold upside down and tap lightly to remove excess chocolate.
5 – Take the molds to the refrigerator for 15 minutes.
6 – Meanwhile, melt the other chocolate half.
7 – Remove the molds from the refrigerator, add the strawberries and top with melted chocolate.
8 – Put back in the fridge and leave until the chocolate is hard. Carefully, remove the candies from the molds.

*To melt the chocolate in the microwave, place on medium power and set for 1 minute. Then, remove, stir and place another minute. Repeat the process until chocolate is melted.

Tips and Options
  • The chocolate can be milk, semisweet, bittersweet or white.
  • Replace the strawberry by grape, hazelnut or peanut butter. It'll be great too.

Colorful Rice

Transform that blend white rice into something colorful and tasty!

Ingredients
1 cup rice, washed and drained
2 cups water
½ diced onion
3 diced garlic cloves
1 tbs olive oil
2 diced potatoes
1 large carrot, grated
parsley and chives, to taste
salt to taste



Directions
1 – In a saucepan, heat oil and add onion and garlic. Let it cook for about 3 minutes.
2 – Add rice and salt, mix well.
3 – Put potatoes and water.
4 – Once the water has evaporated almost completely, place the grated carrots and stir gently.
5 – Lower the heat to the minimum and cover. Simmer until the water dries. Potatoes and rice must be tender.
6 – Sprinkle parsley and chives and serve.

Tips and Options

  • Use other ingredients in the mix, like broccoli, zucchini, corn, chayote, mushrooms, green beans, olives, boiled egg, etc..
  • To give more flavor to the rice, use chicken, beef or vegetable broth instead of water.
  • Serve as a side dish to barbecues, beef, chicken or fish.

Pasta with Sausage

If you are a beginner cook or is just in a hurry, this is the perfect recipe for you: easy, super fast and delicious!

servings: 5
time: 35 minutes

Ingredients
1 lb pasta (medium shells)
1 tbs olive oil
1 tbs butter
1 diced onion
3 chopped garlic cloves
1 lb sliced sausage
3 diced tomatoes
½ cup dry red wine
½ small can tomato paste
salt and pepper to taste
parmesan cheese to garnish


Directions
1 – Cook pasta following the package directions. Meanwhile, prepare the sauce.
2 – In a large saucepan, heat butter and oil. Add onion and garlic and let sauté for about 3 minutes.
3 – Add the sausage, stirring from time to time, and fry until golden brown.
4 – Add tomatoes and a pinch of salt .
5 – When tomatoes are almost all melted, add ½ cup wine and mix well.
6 – Put tomato paste and stir.
7 – Once the pasta is cooked, drain and add to the sauce, cooking for another 2 to 3 minutes.
8 – Sprinkle grated parmesan cheese and serve.

Tips and Options

  • The sausage can be chicken, turkey or pork.
  • If you like pasta al dente, in step 1, remove from cooking 1-3 minutes earlier than specified in the package and finish cooking when mixed with the sauce.
  • Serve with green salad and a glass of red wine.
  • When the pasta is cooked with the sauce, as in this recipe, it is much tastier! :)

Brazilian Style Chicken Wings

Crunchy and well seasoned. Hard to resist to this temptation!

BRAZILIAN STYLE CHICKEN WINGS
(servings: 5 / time: 1 hour)

Ingredients
10 chicken wings
4 mashed garlic cloves
salt to taste
Tabasco pepper to taste
juice of 1 lime or lemon
paprika to taste
1 tbs oil
oil (enough to dip fry the chicken)

Directions
1 – In a bowl, combine all the seasonings (garlic, salt, pepper, lemon, paprika and oil) and mix well with a spoon.
2 – Add the wings and mix well with your hands until the pieces are thoroughly seasoned. Let is rest for 30 minutes, out of the fridge.
3 – In a large saucepan, heat the oil and add the chicken.
4 – Let it fry until golden brown on both sides.


Tips and Options

If your pan is not too large, fry half of the chicken and then the other half.
If you prefer, season the chicken the day before and refrigerate in a pot with lid.
Serve as an appetizer or main dish, with rice, potatoes or green salad as sides.
Serve with lemon wedges and an cold beer!

Meringue

Homemade meringues are easier to make than it looks like!

servings: 60
time: 45 minutes

Ingredients
1 cup egg whites
2 ½ cups confectioners' sugar

Directions
1 - Put the ingredients in a saucepan and stir until it begins to boil.
2 - Turn off the heat and transfer the eggs to the mixer, beating until very consistent, firm and shiny (like snow eggs).
3 - Using a pastry bag (or a plastic with a small hole at the tip), make meringues on a cookie sheet and bake in medium heat (300° F).
4 - Bake for approximately 20-25 minutes

Tips and Options
Here is a very easy and delicious idea to use the meringue. In a serving bowl, combine chopped strawberries and other berries, whipped cream and meringues pieces (break with your hands).

Roasted Butternut Squash

Healthy, easy to make and very tasty. Try this dish today!

servings: 4
time: 1 hour


Ingredients
1.5 lb. butternut squash, cut into cubes
4 thinly sliced garlic cloves
½ onion, chopped
2 to 3 tbs. olive oil
thyme to taste
coarse sea salt, to taste

Directions
1 – In a baking pan, put all ingredients and stir well.
2 – Bake at 350°F, for about 45 minutes.
3 – Every 15 minutes, remove pan from the oven, mix with a spoon and return to bake.

Tips and Options
  • The dish can be served cold or hot.
  • Serve as side dish to any meat, poultry and fish.
  • The baking time varies according to the size of the cubes you cut. Taste as you go to ensure that they are soft as you prefer.
  • To have less work washing the baking pan, line it with foil paper.
  • Blend the left overs (adding water). Freeze and use to make a creamy soup!

Besides being very tasty, butternut squash contains carbohydrates, protein, calcium, sodium, potassium, phosphorus, iron, magnesium, vitamins A, C and E, and very little fat.

Beef Stew

Quick and Easy! Try the pressure cooker version for that classic beef stew.

servings: 4
time: 40 minutes

 

Ingredients
1.5 lb beef stew cut into cubes (chuck roast or bottom round)
4 garlic cloves, minced
1 chopped onion
1 diced tomato, peeled
cumin
salt and black pepper, to taste
½ cup chopped parsley
2 tbs oil (olive or vegetable)

 




Directions
1 – Cut the meat and season with salt, pepper, cumin and garlic.
2 – In the pressure cooker, heat oil and add the meat. Fry for about 2 minutes. Mix well.
3 – Add onion and tomato. Stir and cook for 5 more minutes.
4 – Put some water (about ½ cup) and cover the pan.
5 – After 20 minutes cooking, turn the pressure cooker off and wait for all the pressure to be released before opening the pan.
6 – With the lid already open, turn the heat back on and simmer until the water has evaporated (to your preference) and transformed into a thick broth.
7 – Try and add more salt, if necessary. Sprinkle with parsley and serve.

Tips and Options
  • Season meat a day before the preparation, adding 1 cup of dry red wine.
  • Change the water by red wine or beef broth.
  • Replace the parsley for cilantro.
  • Add chopped vegetables when you get to step 6 and cook until soft. Could be potatoes, carrots, chayote and/or bell peppers.
  • White rice and green salad are good side dishes.

Beef Stew was Mrs. Raimunda's specialty, my paternal grandmother, and until today, I have never tasted any better one. My mother is getting there and I 'm just crawling in the preparation of the dish, which is one of my favorites!

White Cake with Chocolate Ganache

Perfect for an evening with family!


servings: 20 slicestime: 
50 minutes

Ingredients

2 cups all purpose flour 
1 ½ cups sugar 
4 eggs (yolks and whites separated) 
1 pinch of salt 
1 cup warm milk 
1 tbs butter
1 tbs baking powder 

Chocolate Ganache (suggestion):
1 cup heavy cream (or 1 can table cream)

8 oz unsweetened chocolate chips



Directions

1 – Mix warm milk and butter in a bowl. Set aside.
2 – In the mixer, beat the egg whites into snow.
3 – Add the egg yolks, one by one, and then the sugar. Mix until it is light yellow and creamy.
4 – Add flour and milk/butter, alternating the ingredients.
5 – Add baking powder and mix with a spoon.
6 – In a greased and floured baking pan, bake (at 350°F) for about 35 minutes (or until fully baked and golden on top).
7 – Spread the ganache on top.

 

Chocolate Ganache:
In a saucepan, heat the cream until small bubbles begin to form. Turn off the heat and add the chocolate chips. Wait 3 minutes and stir well until it forms a consistent and smooth mixture.

 

Tips and Options
  • This is a basic recipe for white cake and you can use the frosting or topping of your choice.
  • Serve the cake with ice cream and the ganache, while still arm. Yummy!

Tuna Lettuce Wrap

Great dining option for summer evenings – and to keep you in shape


servings: 1

Ingredients
1 tuna can
½ cup corn
1 cup chopped mushrooms
5 to 6 green olives, chopped
½ cup mozzarella cheese, cut into very small cubes
chopped parsley and chives, to taste
1 tablespoon olive oil
juice of ½ lemon
salt to taste
8-10 lettuce leaves, washed and dried
2 tablespoons finely chopped onion and garlic (optional)

Directions
1 – In a bowl, mix all ingredients well.
2 – Season with lemon, olive oil and salt and stir again.
3 – Serve with lettuce leaves on the side and wrap them while eating.

Tips and Options

- Add 1 grated carrot and 1 chopped tomato.
- Other vegetables also combine: peppers or sauteed zucchini and steamed broccoli, finely chopped.
- Instead of tuna, use turkey breast.

Meatballs

Very tasty option to go along with that traditional pasta dish!

servings: 20 units
time: 1:30 hour

Ingredients
1 pound ground beef
½ package French onion soup/cream mix
½ onion, finely chopped
3 crushed garlic cloves
salt and pepper to taste
1 slice of white bread
¼ cup milk
1 whole egg
½ cup chopped parsley and/or chives
all purpose flour (about 1 cup, total)
tomato sauce, ready (about 4 cups)

Directions
1 – In a bowl, combine ground beef, salt, pepper, onion soup mix, onion and garlic.
2 – Soak the bread in milk and add to the mixture.
3 – Add egg, flour (about 5 tbs.), parsley and mix well with your hands, until it forms a consistent mixture.
4 – Using your hands, shape the meatballs the size you like.
5 – In a deep plate, put about 3 tbs. of flour with a pinch of salt and roll the meatballs, pressing lightly with your hands (this will prevent the meatballs from breaking apart while cooking).
6 – In a large saucepan, heat the tomato sauce of your choice and add the meatballs.
7 – Cover and let it simmer for at least 20 minutes, stirring gently from time to time.

Tips and Options
  • Add more or less flour to the mixture so that it is consistent and easy to shape.
  • To make meatballs stuffed with cheese, cut mozzarella into cubes and add to the center while shaping them.
  • Many meatball recipe's combine more than one type of meat (e.g., beef and pork). For a lighter option, use ground chicken or turkey breast.
