Cumin Beef Potato

Simple and easy to prepare, this recipe tastes like mom's food.

Ingredients
1 pound beef sirloin, top sirloin or tenderloin cut into cubes
salt, pepper and cumin to taste
1 teaspoon vinegar
1 large onion, chopped
4 chopped garlic cloves
1 tbs. canola oil
4 diced yellow potatoes

Directions
1 - Season the meat with salt, pepper, cumin, garlic and vinegar and mix well. Leave in a covered bowl for 20 minutes, in the refrigerator.
2 - In a pressure cooker, heat canola oil and place the meat.
3 - Wait until the meat is browned on one side, stir and let it brown a little more.
4 - Add onions, mixing well.
5 - Add 2 tablespoons water and cover the pan.
6 - On medium heat, leave cooking for about 10 minutes, after pressure starts.
7 - After the pan is cool, open the lid and add potatoes. Stir.
8 - Cover pan again and return to high heat, for 3 minutes.

Tips
  • You can serve this dish with other vegetables such as green beans (photo), asparagus, peas, or sauteed kale or collard greens.
  • Corn cream or a green salad are also good side dishes.
  • Before use your pressure cooker, read the product manual instructions.

Shrimp and Asparagus Spaghetti

Refreshing and light, this pasta is going to conquer your taste buds.

SHRIMP AND ASPARAGUS SPAGHETTI

Ingredients
1 pound spaghetti
½ small onion, grated
4 crushed garlic cloves
1 pound shrimps (fresh or frozen)
½ cup white wine
2 cups chopped asparagus
juice of 1 lemon
1 tbs. olive oil
salt and pepper to taste
fresh chopped basil to garnish

Directions
1 - In a large saucepan, put water and 1 tbs. Salt. Bring to a boil (see pasta packing instructions to determine the amount of water and cooking time).
2 - Mix onion and garlic with a pinch of salt.
3 - Heat olive oil and add onion and garlic. Leave for a few minutes and put shrimps.
4 - After 2-3 minutes, add wine and asparagus (in high heat) and allow the mixture to dry.
5 - Season with salt and pepper to taste.
6 - Add cooked pasta and lemon, mixing well.
7 - Finish with chopped basil.

Tips
  • Instead of asparagus, you can use (or add) broccoli, zucchini or eggplant.
  • If you like, add red pepper strips.
  • To make the dish tastier, add olive oil or a tablespoon of butter after turn off the heat.
  • To make the recipe even healthier, use whole-wheat pasta.

Chocolate Cupcake

A Brazilian cake recipe to make the traditional American cupcakes.

CHOCOLATE CUPCAKE

Ingredients
Batter
5 eggs (at room temperature); separate egg whites and yolks
2 cups all purpose flour
2 cups sugar
1 cup warm milk
6 tbs. cocoa powder
1 tbs. baking powder
grated coconut to decorate

Topping
1 cup heavy cream (or 1 can table cream)
12 oz. unsweetened chocolate chips

Directions
Batter
1 - In a large bowl, beat egg whites until foamy white and double in volume.
2 - Add egg yolks, one by one.
3 - Put sugar and beat until batter is light yellow.
4 - Using a spoon, add flour, cocoa powder, milk and baking powder. Stir until form a homogeneous mixture.
5 - Put in the cupcake pan (filling 2/3) and bake for about 20 minutes in preheated oven (to 350°F).
6 - After baking, make a hole in the middle of each cupcake and add dulce de leche.
7 - Garnish with coconut.

Topping
1 - In a sauce pan, heat the heavy cream.
2 - Once begin to boil, turn the heat and add chocolate chips. Do not stir.
3 - After 5 minutes, stir until it is consistently, bright and creamy.

Tips
  • As garnish, you can use grated coconut, grated chocolate or chocolate sprinkles.

Creamy Beef Tenderloin Strips

Dinner for two? Try this tasty recipe.

(2 servings / 30 min.)
 
Ingredients
600 lbs. beef tenderloin cut into large strips
salt, pepper and paprika to taste
3 crushed garlic cloves
1 tsp. olive oil
½ cup red wine
½ onion, chopped
1 cup sliced mushrooms
½ tsp butter
½ tsp all-purpose flour
½ cup chopped green onions (or chives)

Directions
1 - After cut meat into strips, season with salt, pepper, paprika and garlic. Let it rest in a bowl while you cut and separate the other ingredients.
2 - Heat olive oil in a large saucepan and place the strips of meat. Let them brown for 3 minutes, turn, leave for 3 more minutes.
3 - Remove the meat from pan and set aside.
4 - Back to the pan, add onion and cook until it gets translucent.
5 - Put mushrooms and saute for 2 minutes.
6 - Add wine and butter, mix.
7 - Once it begins to boil, lower the heat and sprinkle the flour, stirring well to avoid lumps. Mix for about 5 minutes.
8 - When sauce is creamy, taste it and add salt and pepper, if necessary.
9 - Put the meat back into the pan, to warm up.
10 - Turn off the heat and add green onions.

Tips
  • Change the beef tenderloin for Top Sirloin or Trip-Tip.
  • If you prefer chicken, use chicken breast strips and white wine instead of red.
  • Green salad and mashed potatoes are good sides for this dish.
  • Another option: rice (white, whole or Greek) and green salad.
