Lemon Cupcake

Sweet and sour are the perfect combination in this cupcake.

LEMON CUPCAKE
(24 servings / 1h30min)

Ingredients
5 whole eggs (separate yolks and whites. 2 egg whites for the batter, 3 for the cream)
12 tablespoons sugar
2 tablespoons butter, softened
8 tablespoons all-purpose flour
3/4 cup milk
1 tablespoon baking powder
3 lemons
1 (14 oz) can sweet condensed milk
 

Directions
Batter
1 – In a mixer, mix 5 egg yolks, 8 tablespoons sugar and butter. Beat until it gets lighter.
2 – Add flour and milk and beat some more time.
3 – In a separate bowl, beat 2 egg whites into snow.
4 – Using a spoon, incorporate to the batter: egg whites, baking powder and grated lemon peels.
5 – Place the batter into the cupcake pan, filling it to 2/3.
6 – Bake at 350°F for about 20 minutes.
7 – After baking the cupcakes, put the cream and then the topping.
8 – Return to oven until the topping is golden (for about 3 minutes).

Cream
1 – In a bowl, mix condensed milk and juice of 3 lemons. 

Topping
1 – Whisk 3 egg whites into snow.
2 – Add 4 tablespoons sugar and beat 1-2 minutes more, until it is consistent. 

Tips
  • To bake a Lemon Cake instead of cupcakes: on step 5, place batter into a greased and floured pan. Step 6: bake at 350°F for about 35 minutes.
  • Add some diced walnuts to the batter.

Creamy Beans Soup

Warm up your winter days with this Brazilian soup.

CREAMY BEANS SOUP
(4 servings / 1 hour)

Ingredients
1 pound cooked pinto beans
4 oz diced bacon
1 minced onion
6 minced garlic cloves
2 cups beef broth (or 2 beef or beans bouillon cubes)
2 bay leaves
1 cup diced scallions or green garlic
salt and black pepper (or Tabasco), to taste

Directions
1 – Blend beans with some of the beef broth (if you are using bouillon cubes, use water here) until it gets thick and liquid.
2 – In a pot, cook bacon until almost crisp. Remove from pan and set aside.
3 – In the same pot, over medium high heat, add onions and garlic, stirring for 2-3 minutes.
4 – Add blended beans and seasoning (salt, pepper, bay leaves and beef broth or bouillon cubes, in case you are not using broth).
5 – Let the mixture simmering until thickened, stirring often, for at least 15 minutes. If necessary, add some water.
6 – Before remove from heat, add bacon and scallions and taste. If needed, re-season with more salt or pepper. 

Tips
  • Serve with bread, cheese or bruschettas.

Brazilian Chocolate Candy (Brigadeiro)

The most famous Brazilian candy is a must-have item at a birthday party.

BRAZILIAN CHOCOLATE CANDY - BRIGADEIRO
(20 servings / 40 minutos)

Ingredients
1 (14 oz) can sweet condensed milk
3 tablespoon unsweetened cocoa
1 tablespoon butter
chocolate sprinkles
mini baking cups

Directions
1 – Mix the three first ingredients in a pan and bring it to a medium heat.
2 – Keep stirring until it thickens enough that you can see the pan bottom.
3 – Pour into a plate (greased) and let it cool.
4 – Grease your hands and, using a teaspoon, take small portions and shape it into little balls.
5 – Roll the balls in chocolate sprinkle and place them in the mini baking cups.
